{recipe} kitchen sink pita pizza


I know I told you only a few days ago that this was the only pizza recipe you will ever need to know. I'm all for cleaning out the refrigerator before I go to the grocery store though. Mushrooms? Those were sauteed with spinach during my little ravioli-making stint. Grape tomatoes? The pint is already gone! Basil? Well... let's be real. That stuff never lasts longer than a few days.


This pizza was a creation of my own imagination.

Er.

The dwindling contents of my fridge may be the better description.

Artichoke hearts? Check.
Roasted red peppers? Check.
Spinach? Check.
Mozzarella? Check.
Feta? Check.
Garlic? Check.
Red onion? Check.
Pizza sauce? - Pasta sauce. Close enough.
Pita bread? Check.

Simple directions:
425F.
15-20 minutes or until cheese is bubbling and crust is browned.


I love pita pizzas so much.
Perfect portion and endless possibilities.

I am already thinking that a spinach and artichoke (like the dip!) with caramelized onions and gouda cheese pizza sounds heavenly. Or maybe a barbecue chicken pizza, like my favorite at CPK!

Oh, and speaking of cleaning out the refrigerator... I completely cleaned mine out today.

Scrubbed, tossed, organized - the whole shabang.

I'm like a proud momma bear of that fridge now.
